Almost no factor is as important for producing a good olive oil as the right harvest time. When the time comes, you must observe the development of the fruit very closely, but also keep an eye on the weather, because it must be dry when harvesting!
This year, the harvest had to take place in two phases due to rain (end of October and beginning of November). Since it had not rained in August and September, the olives had little oil. However, we are very satisfied with the quality and taste of the oil and think it was a successful year!
